VEGAN, GLUTEN FREE, KETO-APPROVED SUPERFOOD CHOCOLATE MOUSSE

Using canned coconut milk, chocolate protein powder, cacao nibs, and toasted coconut flakes, you’ll be coming back to this dessert again and again. And the best part? It only takes 10 minutes to whip up 🤩
What makes this a “superfood” mousse?
The protein powder that I use in this recipe contains fiber, 13g of plant-based protein, adaptogenic mushrooms, and sprouted grains to keep you satiated and feeling good. Coconut fat is also an amazing anti inflammatory and helps with fat burn.
Pure cacao nibs are naturally high in fiber, protein, and healthy fats, yet low in sugar. They are also a brilliant plant-based source of iron; making it a great addition to the vegan diet.
Ingredients:
One can coconut milk – refrigerated overnight
One packet/serving of Juice Plus Chocolate Complete (can be purchased on my site http://www.aquene.juiceplus.com)
Vanilla extract or coconut extract
Cacao nibs
Coconut flakes
(Optional) Coconut sugar
Directions:
Open can of coconut milk and scoop out solid coconut into a mixing bowl. Leave remaining coconut water aside and save for future smoothies 😋
Whip coconut cream and coconut sugar (optional) with a whisk or high speed blender for 2 minutes until thick and smooth
Transfer 2 tbsp of coconut cream to small bowl to add on for topping at the end
Add Juice Plus Complete and vanilla/coconut extract to coconut cream in mixing bowl and whisk until blended. If too thick, add coconut water remaining in can to change consistency.
In a dry saucepan over medium-high heat, toast a handful of coconut flakes for about one minute. Stir often to prevent burning.
Transfer chocolate mousse to serving ramekins and top with coconut cream, coconut flakes, and cacao nibs.
